I recently attended my lovely friend Illa’s baby shower and brought along a few dips, and since I got so many requests for the recipes, I thought I’d share with everyone. Two of the favourites: a Cashew Cheese Ball and a Beet Pate are recipes from One Green Planet.
They are ridiculously easy to make and consist of veggies and nuts, so good for you. Just omit the salt if a concern for you little ones.
My pesto was a combination of equal parts basil and kale with equal parts pine nuts and walnuts blended with good olive oil, a couple cloves of garlic, 1/2 a juiced lemon, a little lemon zest and a sprinkle of salt flakes. I used roughly 4 cups of greens and 1 cup of nuts.
